Honey Mustard Chicken Burger

A simple marinade, a simple sauce, but it all combines for a flavourful and nutritious dinner! Serve this with your choice of side.

Ingredients:

Marinade

  • 1/4 cup extra-virgin olive oil or oil of choice
  • 1/4 cup Gluten free soy sauce or coconut aminos
  • Juice of 1 lime 
  • 1 tbsp ground mustard 
  • 1 tsp chili powder
  • 1 clove of garlic pressed
  • 2-3 boneless skinless chicken breasts (butterflied)

Sauce

  • 1/2 cup mayonnaise
  • 3 tbsp honey 
  • 2 tbsp dijon mustard
  • 1/2 tsp hot sauce
  • Toppings : lettuce, sliced red onion, pickle
  • Side dish : salad, fries, steamed veggies, or fresh veggies and dip
  • Gluten Free Buns

Directions:

  1. Whisk together ingredients for marinade. Combine marinade and butterflied/halved chicken breasts into a resealable bag and refrigerate for at least 30 minutes, but could be done the night before.
  2. Combine the sauce ingredients, and reserve for topping.
  3. Choose to grill your chicken on the BBQ, stovetop, or cook in the Air Fryer. Cook times will vary depending on your method, but make sure your chicken is cooked until the internal temperature is at least 165 F
  4. Serve on gluten free buns with side dish of choice.

Tips:

  • Cutting your chicken breasts in half is optional, but extends your meat. You can purchase chicken this way but you do pay a premium for it. If you’re doing it yourself, make sure to do it safely. It is easier and safer to butterfly your chicken if it is partially frozen.

  • I cannot eat soy, so I always use coconut aminos. I buy a large jug to reduce overall costs, and then refill a smaller container for serving.
