Paprika Chicken

Sheet pan dinners are weeknight rockstars, and this one is no exception. Easy, delicious, and nutritious, enjoy these flavours on a busy night when you want to throw it all together and forget about it.

Ingredients

  • 6-8 chicken drumsticks or thighs, bone in, skin on
  • Salt
  • 1 lb Brussels sprouts, trimmed, and halved
  • 2-3 sweet potatoes (depending on size), peeled, and cubed
  • 4 shallots, peeled, and quartered
  • 2 garlic cloves, pressed
  • 2 Tbsp oil

Spice Mixture

  • 2 tbsp paprika
  • 1 tsp ground coriander
  • 1 tsp allspice
  • 1 tsp salt
  • Add ins : 2 tsp garlic, 2 Tbsp oil

Directions

  1. Preheat oven to 425 degrees F.
  2. Combine spice mixture in a bowl
  3. Place sprouts, sweet potatoes, pressed garlic and shallots in a large bowl, toss with 2 tbsp olive oil.
  4. In a small bowl mix the spices together.
  5. Sprinkle 1.5 tablespoons of the spice mixture on top of the veggies, mix well and spread veggies onto sheetpan.
  6. Add 2 tsp garlic, and 2 tablespoons oil to the rest of the spice mix. Mix well to combine into a paste. Coat the chicken with this paste on both sides using a basting brush.
  7. Add the chicken with the vegetables on the sheet pan.
  8. Cook for 30-35 minutes, until the internal temperature of the chicken is at least 165 F and the veggies are prepped to your satisfaction.
  9. Serve with something fresh and light : raw veggies, sweet broccoli salad, or side garden salad.
