Ready to change up your stir fry? This flavourful combination of fresh herbs and veggies will rock your wok! Enjoy.
Ingredients
- 1 tbsp oil
- 1 lb pork, sliced
- Salt & pepper
- 1 clove garlic pressed
- 1 red onion, sliced
- 1 bell pepper, sliced
- 2 cups mango (frozen or fresh)
- 1/4 cup fresh basil
- 1/4 cup gluten free soy sauce or coconut aminos
- 1/4 cup broth
- 1 tbsp sugar
- 1/4 tsp red chili flakes (optional)
- 1 tbsp corn starch or tapioca flour
- 1/4 cup cashews crushed
- Serve with : prepared rice
Directions
- Heat 1 tbsp oil in skillet over medium heat
- Salt & pepper pork
- Cook pork in skillet until almost done
- Add to skillet : red onion, garlic, bell pepper and continue cooking for a couple minutes until veggies start to soften.
- Add mango, basil, soy sauce (or coconut aminos), broth, sugar, and chili flakes
- Bring to a simmer, then add starch (well blended with a bit of water)
- Turn heat to low and allow sauce to thicken for a couple minutes
- Serve over prepared rice topped with crushed cashews
Tips
If you are also soy free, coconut aminos can be a life saver! I buy a large container, and refill a smaller container for daily use. This saves a lot of money.
