A one pot dish for the whole family to enjoy. This was an absolute hit with my kids. They requested it for dinner the following night. When its this easy to throw together, I don’t mind giving in to that request.
Ingredients
- 2 chicken breasts, cubed
- 1 can pineapple tidbits (with juice)
- 2 tbsp oil
- 1 onion, chopped
- 2 cloves garlic pressed
- 1 red bell pepper chopped
- 1.5 cups jasmine rice
- 2 cups chicken broth
- 3 tbsp gf soy sauce or coconut aminos
- 1 tsp grated ginger
- Salt and pepper to taste
- 4 green onions, sliced
- Optional : chili flakes
Directions
- Heat 1 tbsp oil in skillet and cook cubed chicken over medium heat until done, remove chicken and set aside.
- Cook onion, pepper, and garlic in oil in skillet for a couple minutes until starting to soften.
- Add canned pineapple with juice, rice, broth, soy sauce, and ginger.
- Bring to a simmer, then reduce heat.
- Cover and cook for 18-20 minutes until rice is cooked.
- Stir prepared chicken and chopped green onion into the mixture.
- Serve topped with chili flakes if desired
Tips
- Save time : have your vegetables prepped and your chicken pre cooked before the day. This will come together so quick.
- Bone broth : bone broth is nourishing and healthy! Either make your own or purchase powdered bone broth
