Shawarma Rice Bowl

Who doesn’t love a fresh rice bowl, bursting with flavour? I am sure that you will absolutely love this combination of flavours. Leftovers will also make for a quick and easy lunch option next day.

INGREDIENTS

  • 2 cups jasmine rice
  • 2 chicken breasts, cubed
  • 1 tbsp shawarma seasoning
  • 1/2 cup hummus
  • 1 cucumber diced
  • 1 cup grape tomatoes, halved or quartered
  • 1 bell pepper diced
  • 1/2 cup Garlic Sauce (Toum)
  • Optional : fresh parsley, pickled turnip

DIRECTIONS

  1. Prepare rice as per directions
  2. Heat 1 tbsp oil in skillet over medium heat
  3. Cover cubed chicken with shawarma seasoning and cook in oil until cooked through.
  4. Divide rice in bowls with hummus, chicken and fresh veggies
  5. Top with toum garlic sauce and (optional) fresh parsley

Tips:

  • Add as many veggies as you want to this bowl.
  • If you have trouble finding toum, or pickled turnip, contact a Lebanese or Mediterranean restaurant in your area. Ask to purchase a side of both.
