Enjoy the taste of Thai without marinating, prep or meat on a stick. You’ll want to make this delicious and easy sheet pan dinner part of your regular rotation!
INGREDIENTS
- 2lbs bone in chicken
- 1.5 tbsp curry powder
- 1 tsp fresh ginger
- 1 clove garlic
- 1/2 tsp salt
- 2 tbsp coconut aminos
- 1 tbsp peanut butter
- 1 tbsp sesame oil
- 1 lb green beans
- 1 red onion thinly sliced
- 2 cups rice
- Honey
- Crushed peanuts
- Cilantro
DIRECTIONS
- Heat oven to 425F
- Combine curry powder, ginger, garlic, salt, coconut aminos, peanut butter, and sesame oil
- Baste chicken with the mixture, place chicken on a sheet pan and then put in the oven.
- Cook for 10 minutes
- Toss green beans and red onion with oil, and add to sheet pan and put back in the oven.
- Meanwhile prepare your rice.
- Continue cooking until chicken reaches internal temperature of at least 165 F.
- Serve chicken with rice and veggies, topped with a drizzle of honey, crushed peanuts, and cilantro
