Because what is better than lasagna? Lasagna that cooks for you throughout the day and is perfectly prepared when you are ready for it.
Ingredients
- 1.5 lb ground beef
- 1 onion, chopped
- 2 cloves garlic pressed
- 2 cans (398ml) tomato sauce
- 1 can tomato paste
- 1 Tbsp Italian Seasoning
- 1 Tbsp brown sugar
- 2.5 cups mozzarella (divided)
- 8 oz (227g) ricotta cheese
- 1/3 cup grated parmesan cheese
- 1 package gluten free lasagna noodles
Directions
- Brown ground beef with chopped onion and 2 gloves of pressed garlic in a large skillet over medium heat
- Drain excess fat if needed
- Add 2 cans of tomato sauce, 1 can of tomato paste, 1 Tbsp Italian Seasoning, 1 Tbsp sugar and mix until blended (don’t worry about simmering or further cooking)
- Mix together ricotta, parmesan, and 1.5 cups mozzarella cheese in a bowl.
- Assemble lasagna in slow cooker. Add a generous layer of meat sauce to slow cooker bowl, then layer of lasagna noodles, then a layer of half of the cheese mix, then meat sauce, noodles, and the other half of the cheese mix.
- Finish with a layer of meat sauce, then top with remaining 1 cup of mozzarella cheese.
- Slow cook on low for 4-5 hours. Enjoy!
I’ve always used Catelli gluten free lasagna noodles with great results.
You can prep meat sauce and mix the cheese the night before for super quick morning prep, or prep the whole thing and then pop it in the slow cooker in the morning. Easy!
