There are many reasons that one might have to cut out tomatoes. The first time I cut out tomatoes it was for an interstitial cystitis diet. This time, its for a low histamine diet. Having a handy recipe for tomato sauce (without tomatoes) helps ease that transition.
I do make my nomato sauce with the help of the Deluxe Cooking Blender. Its completely hands off, temperature controlled to the degree and makes living with food restrictions so much easier! This sauce makes itself while I am doing other things. You could make this with a Vitamix if you choose, or you could prepare it on the stovetop and then use an immersion blender, or traditional blender (very carefully).
Ingredients:
- 3 medium/large carrots
- 1 beet
- 1 onion
- 2 sticks of celery
- 1 small by a leaf
- 2 cups of water or broth
Directions:
- Prepare vegetables, make sure all are cleaned then : peel and roughly chop carrots, cut the ends off the beet and roughly chop, cut ends off onion and take off the outer peel and roughly chop, roughly chop celery
- Place all ingredients in the Deluxe Cooking Blender
- Turn dial to SOUP, press start.
- This will make about 6 cups of sauce, divide into 1 or 2 cup portions for future use
Tips:
- I use these plastic containers and label them, or you could use 1 cup wide mouth mason jars, I portion the sauce and then freeze for future use.
- You could peel your beets, I just don’t want red hands. The blender pulverizes it completely.
- Season your nomato sauce as you would tomato sauce to make pasta sauces and pizza sauces. You may find that you have to add more salt to your finished dish.
- To make this on your stovetop, peel your beet, chop the vegetables a little smaller. Bring it to a simmer, then cover and allow to simmer until vegetables are soft enough to process.
