Pad Thai

Skip the take out! Why waste money, when this dish is so easy to make at home. Bring that restaurant flavour home that the whole family is going to love. You could buy a sauce… but you may have all the ingredients at home already.

INGREDIENTS:

  • 8 oz rice noodles
  • 1 chicken breast, sliced
  • Pad Thai Sauce (or use Jar of Pad Thai sauce)
  • 2 eggs, beaten
  • 3 Tbsp oil
  • 1 pepper, thinly sliced
  • 1 cup bean sprouts
  • 4 green onions chopped
  • 1/2 cup dry roasted peanuts crushed
  • Optional : fresh cilantro, lime wedges

PAD THAI SAUCE : MIX ALL INGREDIENTS BELOW

  • 1 1″ piece fresh gingerroot, peeled and grated
  • 1/2 cup smooth cashew, almond or peanut butter
  • 3 tbsp water
  • Juice of half a lime
  • 4 tbsp gluten free soy sauce (or coconut aminos)
  • 1/2 tbsp honey
  • 1 tsp sesame oil
  • 1 garlic clove, pressed
  • 1/2 tsp (2 mL) dried red pepper flakes (optional)

DIRECTIONS

  • Cook rice noodles as per directions on the packaging.
  • While noodles are cooking, heat your wok or large skillet with 1-2 Tbsp of oil
  • Add chicken and cook until internal temperature is at least 165 F
  • Add sliced pepper to skillet and cook 2-3 minutes
  • Push aside the chicken and peppers in the pan, add more oil, then add eggs to the pan pushing around to scramble.
  • Add cooked noodles, pad thai sauce, bean sprouts and green onion to the pan, mixing well.
  • Serve topped with crushed peanuts, cilantro, and lime slices if desired

TIPS:

  • Want to add more veggies? This is a great dish to sneak extra veg into! Find any veggie that needs to be used in the fridge and make it a little more delicious when you mix it with all of this.
