Slow Cooker Fiesta Chicken

Want a good fix it and forget it meal? This one is easy, healthy, and takes almost zero effort to throw together. Put it on the slow cooker and let dinner take care of itself while you’re doing other things.

INGREDIENTS

  • 1 (16 ounce) jar salsa (whatever variety you choose)
  • 1 (1.25 ounce) package dry taco seasoning mix
  • 1 medium lime, juiced
  • 1/3 cup chopped fresh cilantro
  • 3 skinless boneless chicken breasts
  • 1 can of pineapple drained
  • 1 can of black beans
  • 1 can of corn
  • Optional: tortilla chips, taco shells & toppings, guacamole, fresh veggies, more cilantro

DIRECTIONS

  1. Combine all ingredients in slow cooker.
  2. Cook on low for 6-8 hours
  3. Remove chicken, shred, and mix back in.
  4. Serve with tortilla chips as a dip, in taco shells with taco toppings, or with a side of fresh veggies.

Tips:

  • Prep this the night before and pop it on the slow cooker stand in the morning.
  • Instead of just using the cilantro leaves, chop the stems as well. This will save you time and will also add more cilantro flavour
  • Use Old El Paso taco seasoning, Club House (mccormick has very very stringent disclosure statements for gluten free products, which is awesome), or Simply Organic
  • Want to make this in your pressure cooker? Add all ingredients to pressure cook and cook for 30 minutes. Off gas, shred the chicken, and mix it up.
