Spicy, savoury, full of veggies and also vegetarian! Enjoy these delicious stuffed sweet potatoes. Serve with extra veggies and ranch for dip and you’re in for an awesome meal.
INGREDIENTS
- 4 sweet potatoes
- 1 can chickpeas (540ml), drained and rinsed
- 1/2 onion chopped
- 3 sticks celery chopped
- 1 large carrot peeled and chopped
- 1 clove garlic, pressed
- 2 green onions, sliced
- 1/3 cup buffalo sauce
- 4 tbsp gluten free ranch dressing
- Optional : serve with salad or raw veggies and ranch for dip
DIRECTIONS
- Bake sweet potatoes in preferred method.
- Heat 1 tbsp of oil over medium heat in large skillet, and add onion, celery, carrot, and garlic. Cook until softened.
- Add chickpeas to the veggies with buffalo sauce cooking for a few minutes.
- Split your cooked sweet potatoes and make room in there for toppings, I mash it a little inside with a fork
- Add chickpea mixture to the inside of sweet potato, top with sliced green onions and a drizzle of ranch dressing on top.
Tips:
- Ways to bake a sweet potato. Firstly, always stab the sweet potato multiple times with a fork before using any cooking method. Microwave : cook on high for about 7-10 minutes. Check to see if its done, if its not, continue to cook for 30 seconds at a time until its finished. Pressure Cooker: Cook on high for 13-18 minutes depending on the size of your potato. Allow pressure cooker to offgas naturally for 5-10 minutes before releasing pressure. Oven : heat the oven to 425F and cook for 30-45 minutes, checking for doneness anytime after 20 minutes.
