Beef & Broccoli

A stir fry is such an easy way to incorporate extra veggies into your diet, and is super easy to make gluten free. Enjoy this easy (and delicious) dish.

INGREDIENTS

  • 3/4 – 1 lb steak, cut of choice thin sliced
  • 2 Tbsp oil, divided
  • 1 lb broccoli, cut into florets (or 1 bag of frozen)
  • 2 tsp sesame seeds

   Sauce:

  • 1 tsp fresh grated ginger
  • 3 cloves of garlic, pressed
  • 1/3 cup warm water
  • 6 Tbsp gluten free soy sauce or coconut aminos
  • 1 Tbsp rice vinegar 
  • 2 Tbsp honey (or sugar)
  • 2 Tbsp corn starch
  • 1/4 tsp black pepper
  • 2 Tbsp sesame oil
  • Serve with : rice

DIRECTIONS

  1. Cook your rice by preferred method according to package instructions while you are cooking the stir fry.
  2. Place a large skillet with 1 tbsp oil over medium heat. Add broccoli florets and sauté 4-5 minutes.
  3. Remove the broccoli (or push to the side if you aren’t feeling that picky) add oil to the pan, and sliced beef, cooking until meat is just cooked through.
  4. Add the sauce, reduce heat to medium/low and simmer 3-4 minutes. Allow sauce to thicken. Serve over rice.

Tips:

  • Add extra veg to your stirfry! See what needs to be used up for veggies from the week and add them to the mix. It’s going to taste good when you serve it all together.
  • I use coconut aminos since they are gluten and soy free. They are a little more expensive, however I cut the cost by buying a massive bottle and refill a small squeeze bottle for ease of use.
