Caribbean Rice Bowl

Your taste buds are about to start dancing! Enjoy fresh flavours, colours, with a tropical vibe in this delicious and easy to make vegetarian rice bowl.

Ingredients

  • 1 can coconut milk
  • 1½ cups (375 mL) water
  • 2 cups uncooked Jasmine rice
  • 2 tsp Jamaican Jerk rub
  • 1 can black beans rinsed and drained
  • 4 hard boiled eggs (peeled & sliced or quartered)
  • 2 shallots finely chopped
  • 1 red bell pepper, thinly sliced
  • 1 tbsp oil
  • 1 avocado diced
  • 1 can diced pineapple (reserve juice)
  • 3  green onions, sliced
  • 1/4 cup fresh cilantro leaves

        Sauce

  • Reserved pineapple juice
  • 1 tbsp honey
  • 2 tsp ketchup
  • 1 tsp dijon
  • 1 tsp Jamaican Jerk Rub
  • 1 clove garlic pressed
  • Juice of 1/2 lime
  • Salt & pepper to taste

Directions

  1. Prepare rice using coconut milk and water.
  2. Heat oil in medium skillet over medium heat
  3. Cook shallot in oil for 2-3 minutes, add black beans and 2 tsp jerk rub and combine. Push Bean mixture to the side and add red pepper to the skillet. Cook for 2-3 minutes and remove from heat
  4. Combine sauce ingredients in microwave safe dish and cook for 1. 5 minutes, stir.
  5. Add to bowl : rice, beans, red pepper, avocado, eggs and pineapple. Top with sauce, green onion and cilantro
