Thai Basil Chicken Wraps

The fresh basil in this wrap sets it over the edge. Enjoy quick and easy dinner prep with delicious results.

INGREDIENTS

     Peanut Sauce

  • 2 tbsp peanut butter (or another nut butter of choice)
  • 1 tbsp chopped fresh basil
  • 1/4 cup poppy seed salad dressing
  • 2 tsp Asian Seasoning Mix
  • 1 tbsp rice vinegar
  • 1 tbsp water

    Wrap

  • 1/2 cucumber thin sliced
  • 1/2 medium bell pepper thinly sliced
  • 1 chicken breast cooked and sliced
  • 1 bag garden salad mix
  • 4-6 gluten free wraps
  • Chopped peanuts and chopped fresh basil (optional)

DIRECTIONS

  1. Combine Peanut Sauce ingredients
  2. Combine vegetables and chicken for wraps 
  3. Add sauce to the salad
  4. Fill wraps with the salad
  5. Top with chopped peanuts and additional basil if desired

Tips:

  • I use epicure Asian seasoning, you could use any brand. Or use this homemade spice mixture as a replacement : 1/2 tsp each of onion powder, garlic powder, and black pepper & 1/4 tsp each ginger & chili flakes
  • Always check your salad dressing for gluten containing ingredients (BROW) I use Renee’s or Presidents Choice (the one in the refrigerated section)
  • Looking for a gluten free wrap that holds together well? Promise brand or Presidents choice have always worked very well for us. Just make sure to heat them in the microwave first.
