Pizza Panini

Because pizza is always a good idea… even as a sandwich. There’s something that is just awesome about a panini, but feel free to grill this on a pan if you don’t have a press. You won’t be disappointed.

INGREDIENTS

  • 8 slices of gluten free bread
  • 1/2 cup marinara sauce
  • 3/4 cup shredded pizza cheese
  • 1/2 thinly sliced bell pepper
  • 1/2 onion thinly sliced
  • Gluten free pepperoni
  • Side dish : side salad, fresh veggies and dip, steamed veggies

DIRECTIONS

  1. Heat your panini press
  2. Lightly cook your sliced peppers and onion in a little oil until mostly cooked.
  3. Add to bread : marinara sauce, cheese, pepperoni, peppers and onions, then top with other slice of bread
  4. Cook panini in press until golden brown and cheese is melted
  5. Serve with side dish of choice
  6. Optional : use extra marinara to dip sandwich in

Tips:

  • Swap out your protein : use cooked sausage, sliced cooked chicken, or add extra veggies to make yourself a ‘veggie pizza panini’
  • Don’t have a panini press? No problem. Make this on the stovetop in a preheated pan or grill pan turning once. Or use gluten free rolls to make pizza subs. 
  • Like your sauce? Me too. Feel free to add marinara to each slice of bread. Go wild.
  • Bread brands : if I’m looking to buy economically, I will purchase Presidents Choice loaves of gluten free bread. They have a price that is hard to beat. If I am going for a treat and flavour (or trying to impress company) it is all about the Promise bread – SAVE $2 HERE
  • Be sure that your pepperoni is gluten free! Not all are. If it has no brow ingredients or ‘May Contain’ warnings it should be safe. I buy Presidents Choice brand.
