A fresh taco salad is always a good call! And what a great way to sneak in whatever veg you’re craving. Top it off with a salad dressing of your choice, or make your own!
INGREDIENTS
- 1 lb ground beef
- 1 clove garlic
- 1/2 chopped onion
- 2 Tbsp taco seasoning
- 2 Tbsp tomato paste
- 1/2 cup of water
- Salad
- 8 cups lettuce of choice
- 1 cup shredded cheddar cheese
- 2 cups tortilla chips, crushed
- Toppings of choice : avocado, finely diced onion, chopped peppers, jalapeños, cilantro, tomatoes, sour cream, salsa
- Dressing of choice : Chipotle Ranch, Cilantro Lime
DIRECTIONS
- Brown ground beef on medium heat until almost fully cooked, drain excess fat if needed.
- Add pressed garlic and chopped onion to the group beef and continue to cook for a couple minutes until onions are cooked and translucent.
- Add taco seasoning, tomato paste and 1/2 cup of water and allow to simmer for 10-15 minutes.
- Prepare salad toppings
- Add to plate : lettuce, beef, cheese, veggies, tortilla chips and top with choice of salad dressing, or make your own Guacamole Dressing
TIPS
- Why not make a double batch of taco meat? Whether you choose to use it on more salad tomorrow, or choose to freeze it for use another day, it never hurts to have some on hand. Save yourself a little time later, and it won’t take much time now.
