Its a fresh and feisty, easy quick and delicious meal. All of the things you could want from a rice bowl, with the opportunity for endless customization… even for those picky eaters.
Ingredients
- 1 lb boneless skinless chicken breast, sliced (about 2 breasts)
- 1 onion, sliced
- 2 cloves garlic, pressed
- 1.5 tbsp taco or chipotle seasoning
- 1 bell pepper, chopped
- 1 tomato, chopped
- 1 avocado
- 1 lime, quartered
- Cilantro
- Salsa
- Sour Cream
- 2 cups jasmine rice
Directions
- Cook rice in preferred method
- Heat 1 tbsp of oil in a skillet on medium heat
- Add sliced chicken, onion, and garlic with taco seasoning and cook until chicken is cooked through
- Add to bowl: rice, chicken mix, fresh ingredients and top with salsa and sour cream
Tips
- If you want to cook your peppers with the chicken and onion, you may. I prefer the fresh crunch of the chopped peppers in the rice bowl.
