Spring Roll Bowl

All the flavours of a fresh springroll at home… without the need to roll. Yes, shortcuts are the key to maintaining sanity in this wild wild world, and this quick and healthy bowl will keep you both sane and well fed.

Ingredients

  • 200 g gluten free vermicelli noodles (glass noodles)
  • Peanut sauce (purchase or see recipe)
  • 1 English cucumber julienned
  • 1 carrot julienned
  • Fresh herbs of choice : cilantro, mint, green onion
  • 1 bell pepper julienned 
  • 1 mango thinly sliced
  • Prepared protein of choice: chicken, turkey, tofu, or shrimp
  • Optional : crushed peanuts

Directions

  1. Prepare vermicelli noodles as per instructions
  2. Prepare protein
  3. Prepare fresh ingredients
  4. Assemble bowl : rice, protein, fresh ingredients, and top with peanut sauce and optional crushed peanuts

Tips

  • I use Rooster brand Longkou Vermicelli Noodles made from green beans and peas. They are very inexpensive and usually found in the international section of my grocery store. Also known as glass noodles. They cook in 5 minutes.
