Cut this classic sandwich into quarters for the ‘church potluck’ feel, or bask in the joy of how easy this supper just was. Either way, you are winning!
Ingredients:
- 8 hard boiled eggs
- 8 slices gluten free bread
- 1/4 cup mayonnaise
- 2 tbsp finely minced onion
- Salt and pepper
- Side of choice : raw veggies and ranch dip, side salad
Directions:
- Boil or pressure cook eggs until well done.
- Peel eggs and mash together with mayonnaise and minced onion adding salt and pepper to taste.
- Add egg mixture to bread.
- Cut into triangles if you’re looking for the potluck feel
Tips:
- Pressure cooking eggs makes for the easiest to peel hard boiled eggs ever! If you have a pressure cooker and haven’t tried this yet, I cannot recommend it enough.
- If needed add more mayo a tablespoon at a time until the consistency you want is achieved.
