Fudgsicle Copycat (Dairy Free)

Want all the frozen fudgy goodness you enjoyed as a child without the belly ache? I’ve got you covered!

Ingredients

  • 1.5 cups chocolate almond milk (use chocolate milk for dairy version)
  • 1 can coconut milk (use heavy cream for dairy version)
  • 1/4 cup sugar
  • 1/4 cup cocoa
  • 1/4 cup maple syrup
  • 1/4 tsp salt
  • 6 egg yolks
  • 2 tsp chocolate extract (add in after mix is tempered)

Directions for Deluxe Cooking Blender

  1. Add all ingredients to Deluxe Cooking Blender. Turn dial to SAUCE and press start.
  2. When temperature reaches over 165F (or beeps and prompts to ADD) press cancel
  3. Add 2 tsps of chocolate extract and pulse to combine
  4. Pour mixture through fine mesh strainer and refrigerate for at least 4 hours or overnight
  5. Pour mixture into freezer molds, or use a Quicksicle Maker.

Directions for Stovetop

  1. Combine all ingredients in a saucepan. Mix well and heat until mixture is above 165F, but below 185F stirring frequently.
  2. Remove from heat, add 2 tsps of chocolate extract and mix to combine.
  3. Pour mixture through a fine mesh strainer and refrigerate for at least 4 hours or overnight
  4. Pour mixture into freezer molds, or use a Quicksicle Maker

Tips

  • You want to heat the mixture since it has egg yolks in it. This will give a creamy texture to the finished product. For health purposes you want it to be above 165F. If its overheated the eggs will cook… then you will have scrambled eggs instead of tempered eggs and that will be far less appetizing. This is why you want it to be below 185F. Heat your mixture low and slow to avoid overheating and make use of a thermometer.
