Are you a sucker for a good wrap? This one is bursting with flavour and is so easy to make for a change of pace. Plus, you’re definitely going to enjoy getting your veggies in.
INGREDIENTS
- 4 gluten free wraps
- 2 chicken breasts, sliced
- 1 tbsp oil
- 1 bell pepper, sliced
- 1/2 cup sliced cucumber
- 1/2 red onion, thinly sliced
- 2 cups mixed greens
- 1 cup broccoli slaw
- 1/2 cup mayo
- 1/4 cup gluten free teriyaki sauce
- Optional : serve with gluten free ramen or glass noodles tossed in teriyaki sauce, green onion, and any additional vegetables desired.
DIRECTIONS
- Heat oil in skillet over medium heat.
- Cook sliced chicken until done.
- Meanwhile prepare veggies
- Combine mayo & teriyaki to make sauce
- Assemble wrap : wrap, sauce, chicken, veggies, lettuce, sauce and roll it up.
- Serve with optional side dish if desired.
TIPS
- Make your own broccoli slaw : use your broccoli stump. Once you have the florets removed, chop off the woody bottom, peel any tough skin and thinly julienne the rest. Thinly julienne one carrot and mix. This can be done quickly using a fine grater or mandoline.
- Gluten free teriyaki can be found in San J, Kikkomen, or VH.
- Soy free teriyaki sauce is produced by Naked Coconuts (Naked & Saucy)
- Cook your chicken with a little extra teriyaki for even more flavour
- Always heat your wrap as per instructions on package. Not warming your gluten free wrap will yield crumbly results.
- I use President’s Choice brand wraps. I find them just as good as Promise brand, but are more cost effective.
