Egg Nog Salted Caramel Ice Cream (Dairy Free)

Feeling festive? Dairy free egg nog & salted caramel ice cream is the perfect treat 😋

This is so easy to make when you use the Deluxe Cooking Blender. With this tool I promise that you will not need any kitchen skills. And it also costs less than $5 a litre to make. 🙌

Ingredients

  • 1 can of coconut milk
  • 1 cup of raw cashews
  • 1 cup of water
  • 6 egg yolks
  • 1/2 cup of sugar
  • 1/4 cup of honey
  • 1/4 tsp of salt

Add ins (after the cooking cycle)

  • 1 tsp vanilla extract
  • 1.5 tsp rum extract
  • 1 tsp Cinnamon Plus (pumpkin spice, or any combo of cinnamon, nutmeg, clove & other belly warm spices you’d like)

Ice cream topping: caramel sauce 

Directions 

  1. Add all ingredients (except add-ins) to Deluxe Cooking Blender. Press GRIND. When cycle finishes, turn dial to SAUCE and press start. 
  2. When Blender beeps and displays ADD, press cancel. Add the add ins, pulse to mix. 
  3. Pour mixture through a fine mesh strainer into a batter bowl.
  4. Cover and put in the fridge for 4 hours or overnight.
  5. Run cooled mixture through ice cream maker for 25 minutes.
  6. Transfer ice cream (should be soft serve consistency) into freezer safe container.
  7. Take 1/4 cup of caramel sauce, add some salt, pour on ice cream, swirl a bit with a chopstick, fork, or anything small and pointy. 
  8. Allow to set in freezer for a few hours.

Eat often. Share with friends. Top with even more caramel sauce. Enjoy!

Want to make your own dairy free Caramel sauce?

The Deluxe Cooking Blender comes to the rescue again. I use the pampered chef recipe and substitute coconut milk for heavy cream, and earth balance for butter 🙂 

** You can make this on the stovetop. Use a high powered blender to blend the cashews and other ingredients (you may have to soak the cashews first), then transfer to a pot on the stovetop. Cook slowly on the stovetop until the mixture is just over 165 F (if it goes to 185F then you have scrambled eggs instead of tempered eggs and thats going to be weird and chunky… big nope). Add the add ins, pour through strainer and continue with steps above.
