Taco night is quick, delicious, and very easy to make gluten free! This recipe is so fast to throw together… you may want to double this recipe if you’re feeding more than 3 people or if you want leftovers.
Check ingredients always, but Old El Paso and Que Pasa brand hard shell tacos are both gluten free. If you are looking for soft shell, try searching for corn tortillas, but be cautious as many contain or may contain gluten. I like Casa Bonita blue corn tortillas (also available in yellow corn).
Ingredients:
- 1 lb ground beef
- 1 clove garlic
- 1/2 chopped onion
- 2 Tbsp taco seasoning
- 2 Tbsp tomato paste
- 1/2 cup of water
- Hard taco shells or gluten free corn tortillas
- Toppings: choose between salsa, sour cream, guacamole, lettuce, cheese or anything else creative you choose to put on a taco
Directions:
- Brown ground beef on medium heat until almost fully cooked, drain excess fat if needed.
- Add pressed garlic and chopped onion to the group beef and continue to cook for a couple minutes until onions are cooked and translucent.
- Add taco seasoning, tomato paste and 1/2 cup of water and allow to simmer for 10-15 minutes.
- Scoop 2-3 Tbsp of meat mixture into your taco shell and add desired toppings.
