Sheet Pan Chicken & Root Vegetables with Fruit

With fruit? Yes! This sheet pan recipe uses dried fruit to create a fun twist on your standard sheet pan meal. That hit of sweetness will go a long way to liven up your dish.

Ingredients:

  • 2 lbs bone in chicken skin on
  • Salt & Pepper
  • 2 lbs potatoes cubed (choose regular or sweet potato)
  • 2 cups chopped vegetables of choice (celery, carrot, parsnip, turnip, etc)
  • 1 onion wedged
  • 2 cloves garlic pressed
  • 2 Tbsp oil (I use avocado)
  • 1 Tbsp seasoning of choice for protein (Some of my faves? Jamaican Jerk, Crushed Peppercorn & Garlic, or Rosemary Herb)
  • 3/4 cup assorted dried fruit (chopped if its real big)

Directions:

  1. Preheat oven to 425 F
  2. Using a basting brush, spread a small amount of oil on your chicken, then salt and season with seasoning of choice on both sides.
  3. Place chicken spread along centre row of the sheet pan
  4. Cube and chop your vegetables leaving the onion wedged. Put all of this in a bowl
  5. Press 2 cloves of garlic into the veggie bowl, also adding 2 tbsp of oil, with salt and pepper to taste, and stir to combine.
  6. Arrange vegetables around the chicken.
  7. Add sheet pan to oven
  8. After 15-20 minutes turn the vegetables, sprinkle the dried fruit on top.
  9. Continue cooking until chicken is at least 165 F

Too much to contain on a sheet pan? Try using a baking rack, use an additional baking pan, place the chicken on top of the veggies, or cook the chicken in the air fryer while the oven is going. Plenty of options.
