Homemade pizza night is a licence to get creative! Try something new this week with BBQ Chicken pizza. With all the sweet and spicy that you crave on a golden crust, this easy twist on a classic is sure to make for a fun meal.
Ingredients
- Gluten Free Pizza Crust (or use remade crust or your favourite mix)
- 1 chicken breast
- 2 – 2.5 cups shredded marble or pizza cheese
- 3/4 cup + 3 tbsp bbq sauce
- 1 medium red onion thinly sliced
- Fresh cilantro
- Optional extra toppings : sliced jalapeños, pineapple tidbits, black olives
Directions
- Use your favourite pre made gluten free pizza crust, pizza crust mix, or this recipe. Set oven temperature according to crust instructions.
- Cook your chicken breasts and dice (can be done in advance)
- Mix chicken with 3 tbsp bbq sauce
- Spread 3/4 cup of bbq sauce on the pizza
- Add shredded cheese
- Add diced chicken, onion, and any additional optional toppings
- Cook following instructions on the crust until it is golden brown
- Top with fresh cilantro
Tips
- Always read BBQ sauce ingredients carefully to make sure there are no gluten containing ingredients.
- For perfect crispy crust every time, use a pizza stone – however be advised that your stone can only be used for gluten free cooking. Gluten can very easily transfer from a stone, so make sure that yours is a gluten free only stone.
