There is something that just feels fancy about French Toast, even though it is so easy to throw together! Enjoy this simple recipe and try it for a weekend breakfast sometime.

INGREDIENTS

  • 6-8 slices gluten free bread
  • 4 large eggs
  • 1/4 cup milk
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1 tsp vanilla
  • 2 tbsps butter
  • Serve with fruit of choice (bananas, berries)
  • Optional : 1 package of breakfast sausage or bacon, maple syrup

DIRECTIONS

  1. Heat butter in a skillet or griddle over medium heat
  2. Beat together eggs, milk, salt, cinnamon, and vanilla
  3. Dip each slice of bread in the egg mixture, covering both sides thoroughly and move directly to the heated cooking surface.
  4. Flip after 3 minutes, cook for another 1-2 minutes until browned on both sides.
  5. Serve French toast with sliced fruit and breakfast sausage, top with maple syrup if desired.

Tips:

  • Turn this into French Toast bites. Cube bread and toss it in the egg mixture then cook in skillet. You will use about twice as much egg mixture, or half as much bread. This does work best with a firm gluten free bread – yes if your bread is dry and hard this will be perfect. Promise turns soggy too quick. Presidents Choice holds up well. The ‘bites’ are a fun alternative for small children, but are more work.
