Lazy Weeknight Shepherd’s Pie

Love shepherd’s pie, but don’t want to make mashed potatoes first? Me too. We’re not lazy, we’re efficient, and this option will work for you!

Ingredients

  • 1.5 lb ground beef
  • 1 medium onion, chopped
  • 2 tbsp gluten free all purpose flour
  • 1.5 tsp rosemary 
  • 1.5 tsp thyme
  • 1 tsp salt
  • 3/4 tsp black pepper
  • 1/4 cup ketchup
  • 2 cloves garlic, pressed
  • 1 cup of broth
  • 1 cup frozen peas & carrots
  • 3/4 cup frozen corn
  • 1 package of tater tots (or 2 lb potatoes peeled & diced)
  • Optional : 2 cups of cheese (cheddar or marble) grated

Directions

  1. Preheat oven to 400 F
  2. Brown ground beef and onion over medium heat, draining if necessary
  3. Transfer beef to a casserole dish (I love this one)
  4. Add gluten free flour to the beef mixture and mix in well
  5. Add seasonings, ketchup, garlic, broth and stir to combine
  6. Top with frozen peas and corn
  7. Top with 1 package of tater tots (or 2lb potatoes diced)
  8. Optional : Top with 2 cups of grated cheese (cheddar or marble)
  9. Cook for 40-45 minutes or until cooked through

Tips

  • If you choose to use diced potato instead of tater tots, toss the potatoes in a little oil before adding to the dish
  • Substitute rosemary & thyme for 1 tbsp of Rosemary & Herb Seasoning
  • To make dairy free omit the cheese. It will be delicious.
