Air Fryer Quinoa Stuffed Peppers

INGREDIENTS

  • 4 bell peppers
  • 1 heaping cup of cooked quinoa
  • 1 cup corn (frozen or canned)
  • 1 small zucchini chopped
  • 1/2 red onion chopped
  • 1/2 cup salsa
  • 2 tbsp Bell Pepper & Herb seasoning (or use seasoning blend of choice)
  • 1.5 cups shredded cheese
  • 1 cup crushed croutons

DIRECTIONS

  1. Heat corn, zucchini, red onion, salsa and seasoning in skillet over medium heat for a few minutes, then add quinoa and mix together and remove from heat.
  2. Cut peppers in half (from top to bottom) and remove seeds
  3. Fill peppers with the quinoa filling
  4. Top with crushed croutons and grated cheese
  5. Air fry for 7-9 minutes at 400F

Tips:

  • Cook this in the oven if you don’t have an air fryer, or even on the grill
  • Don’t remove the stem from your stuffed pepper. This will help it hold together better
  • Add extra protein and flavour to your quinoa by cooking it in bone broth. If you don’t make your own, check Organika brand. Its powdered, full of protein, and very easy to make.
  • If you have any leftover filling this makes for delicious leftovers or side dish.
  • Dairy free? Skip the shredded cheese.
