Microwave Mug Cake (Gluten Free)

You should never be more than 5 minutes away from cake. And I truly mean this from the bottom of my heart. This easy microwave mug cake will make sure that you always have something sweet when you need it.

Ingredients

  • 2 tbsp oil
  • 3 tbsp brown sugar
  • 1/2 tsp vanilla extract
  • 1 egg
  • 5 tbsp gluten free all purpose flour
  • 1/4 tsp baking powder
  • 1/8 tsp salt
  • 2 tbsp white chocolate chips
  • Additional brown sugar and white chocolate chips for topping

Directions

  1. Mix oil, sugar, vanilla and egg in a 2 cup capacity microwavable bowl (I use a Ceramic Egg Cooker)
  2. Add the rest of the ingredients and mix well.
  3. Top with additional brown sugar sprinkle and white chocolate chips if desired
  4. Microwave for 1 and a half minutes and then check for doneness with a toothpick or a cake tester.
  5. If its not quite cooked through continue to cook for about 10 seconds at a time
  6. Eat it while its warm and enjoy

Tips

  • You could use so many toppings on this : icing, whipped cream, ice cream, or caramel sauce all sound like great ideas
  • I use enjoy life white chocolate chips, though camino and healthy crunch both have allergen friendly white chocolate chips as well.
