Seasoned Chicken With Green Beans & Potatoes

This easy to throw together recipe can be endlessly modified to suit any taste, and is also great for using up that spice blend in the cupboard that you’re really not sure what to do with. A good meal doesn’t have to be complicated.

Ingredients

  • 2 lbs bone in chicken skin on
  • 1 tbsp Asian Seasoning 
  • 2 tbsp oil (divided)
  • Salt & Pepper
  • 1 bag mini potatoes
  • 1 bag green beans (340g / 12 oz)
  • 1 tbsp sesame oil
  • 1/4 cup crushed peanuts

Directions BBQ:

  1. Heat the BBQ
  2. Mix 1 tbsp seasoning with 1 tbsp of oil and baste onto chicken
  3. Cut mini potatoes in half, toss with oil, salt and pepper, and place on a grill safe cooking tray
  4. Toss green beans with sesame oil, salt and pepper and place on a grill safe cooking tray
  5. Cook chicken until it reaches internal temperature of at least 165F, cook potatoes until easy to pierce with a fork, and beans until done to desired doneness.
  6. Top cooked green beans with crushed peanuts, and serve all together.

Directions Oven:

  1. Preheat oven to 425F
  2. Mix 1 tbsp seasoning with 1 tbsp of oil and baste onto chicken, place chicken on sheet pan.
  3. Cut mini potatoes in half, toss with oil, salt and pepper, and place on sheet pan with chicken.
  4. Cook for 15 minutes.
  5. Toss green beans with sesame oil, salt and pepper and add to sheet pan.
  6. Cook until chicken reaches internal temperature of at least 165F
  7. Top cooked green beans with crushed peanuts, and serve all together.

Tips

  • If desired add extra veggies
  • This is a great chance to use a seasoning blend that you have in your cupboard but rarely use. Substitute the Asian seasoning with any flavour you’d like (however in this case you may want to use an alternative oil to sesame oil on your green beans)
  • I use epicure Asian Seasoning, which is a blend of ginger, sesame, garlic, onion and citrus.
