Clubhouse Sandwiches

Clubhouse sandwiches are classic diner fare for a reason : its comfort food. The good news? Its just as easy to make this comforting classic at home, and super quick to throw together with a little prep. Serve with your choice of side and you are in business.

Ingredients:

  • 12 slices gluten free bread
  • 1 turkey breast cooked and sliced (or use deli turkey if preferred)
  • 12 slices bacon, cooked
  • Mayonnaise
  • 3/4 cup shredded lettuce
  • 1 tomato sliced
  • 4 slices cheese
  • Optional : pickle slices for side
  • Side dish : side green salad, veggies and dip, fries (potato, sweet potato, turnip, or parsnip)

Directions:

  1. Prepare your sandwich toppings (can be prepared in advance)
  2. Toast your bread
  3. Spread mayonnaise on slice of bread
  4. Add tomato and bacon
  5. Add another slice of bread, with mayo
  6. Add cheese, sliced turkey, and lettuce to this slice of bread
  7. Top with last slice of bread
  8. Serve with optional sliced pickles and side dish

Tips:

  • Want the full restaurant feel? Quarter your club and use toothpicks to fasten it together
  • Want to cut some calories? Substitute some mayo with dijon mustard.
  • Always be cautious with deli meats and check ingredients for gluten. I’ve had good luck with Maple Leaf Natural Selections.
