Marry Me Chicken Pizza

Savoury sun dried tomato, spinach, mushroom, and chicken married together on a golden brown crust and garlicky cream sauce. Yum!

Ingredients

  • Pizza Crust of choice (mix, prepared, or see recipe)
  • 2 chicken breasts
  • Salt & pepper
  • 3/4 cup Alfredo sauce (recipe for dairy free cream sauce)
  • 1.5 tsp Italian seasoning
  • 2 cloves garlic, minced
  • 1 cup baby spinach
  • 2 cups pizza cheese
  • 1/4 cup Parmesan cheese
  • 1/3 cup of sun-dried tomatoes, chopped
  • 1 cup sliced mushrooms
  • 2 tbsp fresh basil, finely sliced
  • Optional : balsamic glaze drizzle

Directions

  1. Preheat oven to 450F
  2. Prepare crust
  3. Lightly salt & pepper chicken, and then cook in preferred method until internal temperature is 165F.
  4. Mix sauce by combining 3/4 cup Alfredo sauce, 1.5 tsp Italian seasoning, and 2 cloves of minced garlic.
  5. Spread sauce on the dough.
  6. Spread baby spinach evenly over the sauce (it will wilt, so don’t worry if it looks like a lot)
  7. Spread pizza cheese, then parmesan cheese evenly
  8. Add mushrooms, sliced chicken and sun dried tomatoes
  9. Cook as per crust directions.
  10. Serve topped with chopped fresh basil and optional balsamic glaze

Tips:

  • If you’re pan frying the chicken, lightly saute the mushrooms in the same pan before using as a pizza topping.
  • This is enough for 1 large 15” pizza. If you want two pizzas instead double this.
  • Add extra nutrition to your pizza night by serving it with salad.
  • Miss red sauce? Use marinara sauce as a dip for this if desired.
  • Always check sauce ingredients for gluten containing ingredients
