Chicken Fingers (GF)

Why spend money on processed gluten free chicken fingers? This recipe takes only minutes to throw together, has endless potential for flavour variety, and its fun to make because you get to crush things. That sounds like winning all around. Plus they’re delicious.

Ingredients:

  • 1 bag gluten free tortilla chips (I choose salted, you could go unsalted)
  • 1.5 lb chicken breast, cut into strips (or chicken tenders)
  • 1 egg
  • 1 Tbsp oil
  • 1 Tbsp water
  • 2 Tbsp seasoning rub of choice (I use Bell Pepper Herb, or Crushed Peppercorn & Garlic)
  • Side of choice: Caesar salad, garden salad, French fries, steamed veggies, or veggie tray with dip

Directions:

  1. Preheat oven to 425 F
  2. Crush your bag of tortilla chips into small crumbs
  3. In a large sized freezer bag add uncooked sliced chicken, egg, oil, water, and seasoning and mush it all around to combine well
  4. Add bag of crushed tortilla chips into the bag containing chicken, and mix around until evenly covered
  5. Place chicken fingers on a sheet pan and cook for 15-20 minutes, flipping halfway. Cook until internal temperature reads at least 165 F
  6. Serve with choice of side

You can make these chicken fingers in advance and store in freezer bag. Some sticking together may happen. If some pieces stick together, put it in the oven together and separate the ‘stuck’ ones during the mid cook flip.
