Chicken Caesar salad (Gluten Free)

With a little prep you can have yourself dinner for days. Everyone loves a good Caesar salad, and when you’re going gluten free I hope that it gives you hope to know that this is one staple you can definitely still enjoy! Have this as a main dish, a side dish, or turn it into a wrap!

Ingredients:

  • 1 lb boneless skinless chicken breast
  • 2 romaine hearts (or one head)
  • Package of bacon
  • 4 slices of bread
  • 1 clove of garlic
  • 2 Tbsp oil
  • 1/4 tsp dried parsley
  • 1/8 tsp each salt & pepper
  • 1 jar gluten free caesar dressing (see brand recommendations below)
  • 1/3 cup grated parmesan cheese
  • Optional : 6 gluten free wraps (see brand recommendations below)

Directions:

  1. Grill chicken breasts until internal temperature reaches at least 165 F, slice into strips.
  2. Cook bacon until done : chop into bacon bits
  3. Clean and chop romaine lettuce
  4. Make your own croutons : cut gluten free bread into cubes, add 1 clove of pressed garlic, 2 tbsp of oil, 1/4 tsp parsley, 1/8 tsp salt & pepper. Mix until covered and bake at 350 for 10 minutes or air fry for 5 minutes.
  5. Add chopped lettuce and desired amount of caesar dressing to a bowl. Stir until coated to satisfaction.
  6. Heat your gluten free wrap in microwave as per directions (very important)
  7. Assemble wrap : add the dressing coated lettuce, croutons, bacon bits, chicken strips, and parmesan cheese
  8. Fold the bottom of your wrap towards the centre, fold one side of the wrap towards the opposite side, and roll the wrap to complete.

Prep your croutons, bacon bits, lettuce and chicken before to make for easy grab and go meals!

Do you need the whole pack of bacon for your wraps? Probably not. But I’m accounting for snacking while prepping, and the fact that you will have no problem finding ways to use this.

**Be sure to check all ingredients list for any gluten containing ingredients or ‘contains’ or ‘may contain’ statements**

Brand suggestions:

Dressings for all diets : Renee’s is gluten free and delicious, find it in the refrigerated section. Fody does make a low FODMAP caesar dressing (though I have heard mixed reviews). Chosen Foods offers a dairy free and gluten free caesar dressing. With so many restrictions in my diet (soy, dairy, msg, and gluten) I make my caesar dressing using a recipe from Danielle Walker. I cannot recommend her enough as so many of her paleo, allergy friendly recipes will taste like coming home.

Wraps: Presidents Choice (Loblaws) or Promise Brand both hold together really well! Be sure to heat them in the microwave before using or they will be crumbly. If you’re Canadian and want a $2 coupon from Promise here it is!
