A simple salad with a blend of fresh flavours can be the perfect side dish or main course. There is something about a combination of strawberry combined with red onion and a creamy sauce that delights the senses. Enjoy this easy, and healthful recipe.
INGREDIENTS
- 1 package of baby spinach
- 1/2 small red onion, thinly sliced
- 1-2 cups of strawberries thinly sliced
- 1/4 cup sliced almonds
- Optional : garlic bread, chicken breast
For dressing choose a gluten free poppy seed dressing of choice (see a couple suggestions of brands to check in tips), or try this Maple Balsamic recipe:
- 2 tbsp balsamic vinegar
- 1/4 cup mayonnaise
- 1 tbsp maple syrup
- 1/2 tbsp oil
- 1/2 tsp salt
- black pepper to taste
DIRECTIONS
- Combine all dressing ingredients into a jar or bowl and mix (or use a jarred dressing).
- Combine baby spinach, onion, and strawberries in a salad bowl. Add dressing and mix to combine. Top with sliced almonds
TIPS
- If using a jarred dressing be sure to always check for BROW ingredients and ‘May Contain’ statements. Even if you have used the brand before, things can change. I use Renee’s dressing and President’s Choice brand (the one in the refrigerated section)
- If you find red onion a little strong, consider using shallots. They tend to have a milder flavour. Since they are much smaller, they can also be accommodating for making individual salads.
- Consider swapping the spinach for arugula. The spicy fresh flavour of the lettuce adds some extra pizzazz and also may be more suitable to some restrictive diets.
